If you haven’t heard of Yarn Bombing, let me be the one to tell you it’s pretty awesome – it’s also know as graffiti knitting, or yarn storming.

10. Ghoulish Green Brains – Avocado Ice Cream for Halloween

My kids start planning Halloween sometime between late March and early April, so I have plenty of time to think of fun ways to celebrate the holiday with them. We’re having a Halloween party this year and I wanted to serve something unique and different. The kids are into zombies these days, which gave me the idea of making Ghoulish Green Brains – from Avocado Ice Cream.

Not only are avocados perfect for making the desired shade of green for the zombie brains, but they impart a unique flavor and a little healthy eating into this candy-centric holiday. Avocados are available year around, so I’m sure will be having avocado ice cream lots this summer, too. If you have any doubts about avocado ice cream – don’t. It is delicious.

Here’s how to make your own Ghoulish Green Avocado Ice Cream Brains:

Avocado Ice Cream:

Ingredients:

  • 12 ounces avocado, diced (about 2-3 avocados)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 1/2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup sugar

Directions:

  • 1. Peel, pit and dice the avocados and put into the blender.
  • 2. Add lemon juice, milk and sugar to the blender and puree until very smooth.
  • 3. Pour the mixture into a medium-sized mixing bowl, and add the heavy cream. Whisk to combine.
  • 4. Refrigerate the mixture for 4-6 hours – it must be very cool to freeze correctly in the ice cream maker so make sure it has throughly chilled, do not take it out too early.
  • 5. Once chilled, the mixture can be transferred to an ice cream maker. Just follow the manufacture’s standard usage directions for making ice cream. Should be ready in just 5-10 minutes.

When it first comes out of the ice cream maker, you’ll have soft ice cream. I served some to my kids and the neighbors in fun orange cups:

I froze part of the ice cream batch for a firmer consistency in Fred & Friends Brain Freeze Ice Cube Tray and they were equally ghoulish, and delicious.

Not to mention, in the shape of brains!

If you don’t want to go the frozen brains route (and I can’t imagine why), you can still make avocado ice cream perfect for Halloween by adding a chocolate syrup spider web.
